Cook the egg noodles and set aside. In a large bowl, mix together the flour, eggs, green onions, cooked noodles, ham, cheddar cheese, red pepper flakes, cumin, salt, and black pepper. Heat the sesame oil in a pan. Spread the prepared mixture evenly in the pan and cook until golden brown. Flip to cook the other side until golden and crispy. Transfer the pancake to a plate. Top with mayonnaise and additional red pepper flakes, and serve. Enjoy!
